This recipe comes from JamaicanFoodsAndRecipes.com and is delicious! I needed a side dish to go with Island Jerk Pork and this was perfect! We didn’t have scotch bonnet available due to food shortages in 2022 so we added red pepper flakes. It was delicious! I added a little lime and it added another level of brightness. Not only is this a great side dish, I enjoyed eating the left over as a veggie meal on its own with a little Sriracha sauce. Reheated beautifully and we plan to make it again as it compliments any protein seasoned with Island/Jerk Spice.
