VERACRUZ PARRILLADA – Mahi mahi, shrimp and scallops served on a hot skillet with a bed of mushrooms, covered with cheese and green tomatillo sauce, served with lettuce, sour cream, guacamole, mango pico de gallo, rice, refried or black beans and flour or corn tortillas. Of course I didn’t get the carbs and also got a side order of peppers and onions which I didn’t need. This was enough to serve 2 adults and it was fantastic.
The next morning my blood glucose levels was in the low 90s and my ketone level was 1.8. My weight did not change meaning that the carbs were low enough to fit within my daily macro target. Also, no skin reactions, no difficulty breathing (asthma) and no stomach upset.
Update: I have ordered this again on March 3, 2019. No issues after eating.
