Shrimp Ceviche with Cucumber Avocado Salad
Another hectic day. This time we decided to order from our local Tex Mex. Hubby is my hero. He ordered this Shrimp Ceviche with Avocado and Cucumber salad and it was so bright and delicious! Low carb and with such a generous portion it was enough for two servings (lunch and dinner). Shrimp can be high in protein so watch your portions.
