- 1/2 lb Pork Belly
- 4 Tablespoons Maple Monkfruit Syrup
- Kosher Salt
- Vacuum seal or marinate pork belly, maple monkfruit and salt. Marinate for a minimum of 1 hour, preferably overnight.
- Preheat oven to 450°F
- Roast pork belly for 30 minutes, fat side up.
- After 30 mins reduce heat to 275°F and roast for an hour or more.

This was inspired by a recipe from Pinch and Swirl that called for sugar. We simply substituted the sugar for Maple monkfruit sweetner and adjusted the temperature.
