Avocado Stuffed with Southwestern Styled Eggs & Bacon Bits

This took less than 10 mins to make including prep. I used left over chopped onions/peppers from last night. This meal helped me push through 6 hours of work before dinnertime. I wasn’t even starving when dinner came around! Love love love this! I cook the bacon first and use the left over fat to sautee the onions and bell peppers before adding the egg. I also added a splash of Chulula hot sauce (0 carbs). So simple, so fast, so flavorful!

200g Avocado
1 Large Pasture Raised Egg
1/2 Tbsp chopped onion
1 Tbsp  chopped red bell pepper
1 tsp cumin powder
Salt & Pepper to taste
2 strips uncured bacon

70% Fat
13% Carb
17% Protein
