Make the fathead pizza dough recipe s specified using

  • 1/3 cup coconut flour
  • 1 and 1/2 cup mozzarella cheese
  • 2 Tbsp Cream cheese
  • 2 eggs

After making the fathead pizza dough I split the batch into 3 ball and flattened them into discs before insering into the mini waffle maker. Close the lid and do not open until the indicator light goes off.

Add a small amount of pizza sauce on the waffle while it is still on the waffle iron. Then add the pepperoni. The one I used from Applegate was larger than standard pepperoni slices. It covered a mini waffle so I placed it on top of the waffle and closed the lid for another minute. I sprinkled shredded mozzarella on top and added a fresh basil leaf. You could also do this last step in an oven/toaster over under a low broil.

Review:

The Fathead pizza crust made with coconut flour/meal yields 3 to 4 mini waffles or 1 standard Belgium waffle. The texture is soft and fluffy which lends itself well for sweet waffles but may not be the right texture for savory. In the case of pizza I preferred a craffle (just egg and cheese base no coconut meal) or just the standard baked crust.
