Indo Inspired Chicken Patty

Makes 4 Patties

• 1 lbs Boneless skinless chicken thigh
• 2 eggs
• Salt & Pepper to taste

Optional Indo Spice Seasoning
• 1/2 tsp Coriander powder
• 1 tsp Cumin powder
• 1/2 Red Chili powder
• 1/2 tsp Onion Powder
• 1/2 tsp Garlic powder
• 1 tsp Garam Masala
• Fresh Cilantro (2 tbsp roughly chopped)

Directions

  • Bake chicken or used left over baked chicken. Let cool. Pulse in food processor until minced.
  • Add seasonings and eggs.

Form into 4 equal patties. Heat pan to medium high. Add 1 tablespoon of avocado oil. Pan fry on medium high heat for 3 minutes. Flip pan fry for another 3 minutes.

Allow it to cool on a rack.

Crispy Cauliflower Cheese Waffle

Optional Indo Inspired Spices

  • 4 cups minced Cauliflower (cauli-rice)
  • 6 oz shredded cheddar or similar. Grass fed preferred
  • Whole peas
  • Salt and Pepper to taste

Optional Spices

  • Cumin
  • Coriander
  • Turmeric
  • Red chili powder
  • Onion powder
  • Garlic powder
  • Cilantro

Combine all ingredients and spices.

Me running through how I make my low carb cauliflower waffles. These are great for replacing hash browns and even meat dishes.

Instructions

Fill mini waffle iron with

Cauliflower mixture. Close lid and allow it to cook until light goes off (about 3 minutes).

Remove waffle from maker and allow to cool and crispen on a wire rack.

Notes:

This is a great recipe that can be made with left over baked or rotisserie chicken. Simply hand shred chicken and remove the bones. Mince chicken in processor and follow recipe thereafter.

Plating

I enjoyed my chicken patty in between two layers of the cauliflower waffle. I added grape tomatoes for added acidity
