My Dad has been into cooking lately. He likes to bring over a sample of new things he’s trying. Most recently he brought over homemade chicken patties spiced with Indian seasonings such as cumin, coriander, turmeric and other exotic things you don’t find at your local grocery store. He brought the chicken (thigh meat) patties over tonight and we made Indian inspired cauliflower rice and seasoned it with Indian spices you would normally expect in a dish called biryani.
This is the plate my wonderful husband created for me. All the flavors I love from India. Ginger, garlic, cilantro, spices, acidity and a dollop of Greek yogurt often served with Indian meals. All out spectacular, home made and all the carbs come from the cauliflower and veggies. I could have this everyday! This is a dish that makes me not miss rice anymore. ❤
Chicken Patties

Cauliflower Biryani
1 inch Fresh Ginger minced (or 1 tbsp paste)
1 tsp Cumin powder
1/2 Red Chili powder
1/2 tsp Onion Powder
1/2 tsp Garlic powder
1 tsp Garam Masala
Fresh Cilantro (2 tbsp roughly chopped)
Here are the seasonings we used in our cauliflower rice. We ran a medium head of organic cauliflower through a food processor to make cauliflower rice. On the stovetop, heat oil over medium high heat in a large pan. Get as much moisture out of the Cauliflower and add the seasoning above. Garnish with cilantro. Serve with whole fat Greek Yogurt or a tablespoon of sour cream.
