Rough Ingredients
- Fresh salmon with skin removed (10 oz)
- 1/4 cup coconut flour
- Pork rinds (optional)
- Egg
- Kosher Salt
- Fresh ground pepper
- Cumin
- Ancho Chili
- Cayenne
- Green Goddess Dressing
- Chives
I got creative today and decided to experiment with fresh salmon. I removed the skin off two salmon filets (totaling 10 oz) and hand chopped it into very small almost (minced) pieces. Think … what you would expect if you opened a can of packed salmon. In a bowl I added south western/Indo spices such as ancho chili, cumin powder, cayenne, garlic and onion powder, kosher salt and pepper along with almond and coconut flour to the salmon. The patties were not holding together so I added an egg to form slider sized patties. I could have gone smaller for an appetizer size but today 2 of these would be my meal. I sauted the salmon patties in avocado oil for about 3 -4 minutes on each side.
Seen here served with sauted red cabbage and Green Goddess dressing. Add a spritz of lemon 🍋 and omg this is legit! Next time (and there will definitely be a next time) I am going to use pork rinds to the patties for added crispness. This could easily make a delicious sandwich with a keto bun, avocado mayo, lettuce tomato and tarter sauce. Or served with a fancy salad and a keto cheddar bay biscuit. Also the sauces that.could go with this offer their own inspiration
The red cabbage was pre-shredded and I sauted it in olive oil and seasoned very simply with salt, pepper and a quick splash of vinager. Yum! The red cabbage has a sweetness and acidity that paired well with the salmon cakes. It would be interesting to see different sauces and salads… definitely one to remake with different sauces pairings. ❤
