Ingredients

  • 4 Skin on bone in chicken thighs
  • Avocado oil
  • Adobo Seasoning
  • Cauliflower Rice
  • 2 wedges of fresh Lime
  • CIlantro

Directions

  1. Dry chicken and allow it to come to room temp.
  2. Score chicken by cutting slots diagonally.
  3. Drizzle oil and shake on Adobo seasoning. Be careful the seasoning already has salt so a little goes a long way!
  4. Preheat air fryer to 420. I use a Ninja Flip because it has a tray and an air roast feature.
  5. Place seasoned chicken on aluminum foil lined pan drizzled with a little oil to prevent sticking.
  6. Air fry chicken for 20 minutes at 420.
  7. While chicken in baking prepare cauliflower rice or other sides.
  8. After 20 minutes turn heat down to 320 and air fry for another 10 minutes.
  9. Allow chicken to rest. Plate atop the cauliflower rice or your preferred side dish and enjoy!
I used Hanover frozen riced cauliflower which heats up in minutes. While chicken was air frying I prepared the cauliflower rice and added cilantro and lime.
What I love about Hanover brand is that thr macros are on point and the o ly ingredient is Cauliflower with no preservatives or non keto funk.
Let the chixken rest animated or two before plating.
Plated for hubby and I. With a few drops of seasoned oil from the pan.
Cleanup is a breeze!!!!
