This colorful salad is inspired by Thai flavors. Crisp red kale is tossed with sautéed red bell pepper, red beets, cashews, cilantro, and a ginger-lime vinaigrette. It’s all topped with shaved sirloin steak and shiitake mushrooms that are seasoned with Thai-style spices and finished with coconut aminos. A sprinkle of scallion gives the dish bright flavors, while a drizzle of Sriracha sauce adds a touch of heat over top

This recipe is so addictive! Whenever it appears as a Green Chef option we select it. This was probably our third time preparing this and it’s been consistently delicious each time.
