The day after hubby’s birthday dinner (epic cheat day) I’m back on the keto lifestyle. My stomach hurt quite a bit so I made up for it with Intermittent Fasting and decided to do a one meal day. I ended up drinking 2 cups of coffee with heavy cream, cheese and nuts for a snack and this as a late lunch/early dinner. It was so satisfying I needed nothing else to eat for the rest of the evening.

Perfect hearty comfort food for a cold winter’s day. The flavors are warm and the green bell pepper flavor comes through. The creme is a bright addition and the melted cheese seals the deal as it all meets with the sweet butternut squash. This is a favorite new entree we hope to see again in a future Green Chef order.
